Troy is our Brand Manager for The Meat & Wine Co and 6 HEAD brands. Troy has over 20 years experience in restaurant operations, commencing in the original flagship venue for The Meat & Wine in Darling Harbour in 2007 and progressing rapidly through several roles to Assistant Restaurant Manager then becoming Restaurant Manager at Parramatta before returning to Darling Harbour as Restaurant Manager.
Troy’s refined business management skills in planning, organizing and communicating have enabled him to take on broader, more complex roles, all with an eye for the executional detail that running a bigger team and multiple locations requires.
Troy progressed to take on the NSW operations role before becoming the National Operations Manager for The Meat & Wine Co brand.
With the opening of the iconic 6 HEAD venue in The Rocks Sydney, Troy expanded his remit as Brand Manager for both The Meat & Wine Co and 6 HEAD brands. The success of 6 HEAD led to the opening of the second location in Perth in 2023.
