Kamil Bouloot is the Managing Director of Seagrass Middle East, bringing more than three decades of experience in hospitality, restaurant operations, culinary excellence, and business leadership.

Since joining Seagrass in 2019, he has played a pivotal role in the successful launch, growth, and operation of the award-winning Hunter & Barrel restaurants across the UAE. Today, he leads the regional business, driving operational excellence, guest experience, and the continued growth of the group’s hospitality portfolio.

A highly respected chef and restaurateur, Kamil began his career in Lebanon in 1992 and built an extensive foundation across luxury hotels, catering operations, and food service businesses. His career has included senior leadership positions with some of the region’s most recognised hospitality organisations, where he developed a reputation for creating successful dining concepts, building high-performing teams, and delivering exceptional operational standards. Prior to joining Seagrass, he oversaw multiple restaurant brands, developed new concepts, and contributed to the opening of more than 50 restaurants across the Middle East.

Beyond his operational achievements, Kamil is widely recognised as a mentor, educator, and industry leader. Having served as Head of Culinary Arts at Université Saint Joseph in Lebanon for more than 15 years, he helped shape the next generation of hospitality professionals while remaining actively involved in international culinary associations and judging panels. His combination of culinary expertise, commercial acumen, and people-focused leadership has earned him a reputation as one of the region’s most respected hospitality professionals, known for building successful teams, elevating guest experiences, and transforming hospitality concepts into thriving destinations.
