Heritage Bakery & Pizzeria is a new bakery, pizzeria and mill at Tramsheds. It will re-position bread at the rightful heart of our tables, meals, families and lives, and re-define the perception of flour.
Heritage will produce delicious, healthy bread made from grain sourced directly from Australian farmers. Rather than starting with pre-milled flour from unknown origins, Our familia are involved right from grain selection and sourcing of whole grains from local farms, all the way through to the milling of the flour.
All the grains used at Heritage will be ground on-site, using one of the few stone mills in commercial use in Australia, making a more nutritious form of flour. The flour created will then be combined with a natural levain (yeast), then water, salt and baked in a wood fire oven.
Heritage will be open daily for breakfast, lunch and dinner. With every menu item having bread at its core, Heritage will serve a selection of fresh made schichiatta from the wood oven, stone ground, slow fermented wood fired pizzas, plus cakes, pastries, and of course a unique selection of breads
